Lazy Dazy Oatmeal Cake


1 1/4 c. boiling water
1 c. oats uncooked
1/2 c. butter or margarine, soft
1 cup granulated sugar
1 cup firmly packed brown sugar
1 tsp. vanilla
2 eggs
1 1/2 cup sifted flour
1 tsp. soda
1/2 tsp. salt
3/4 tsp. cinnamon
1/4 tsp. nutmeg

preheat oven to 350 degrees. Pour water over oats; cover and let stand 20 minutes. Beat butter until creamy. Gradually beat in sugars. Blend in vanilla and eggs. Stir in oats mixture. Sift together flour, soda, salt and spices. Add to creamed mixture. Blend well. Pour batter into greased and floured 9x13. Bake for 40-45 minutes, or until toothpick comes out clean.

Frosting:
1/2 cup melted butter
1 cup firmly packed brown sugar
6 T. light cream (or canned milk)
1 cup chopped nuts (walnuts or pecans)
1 1/2 cup coconut

For frosting combine melted butter, brown sugar, cream, nuts and coconut. Spread over cake. Broil in oven until bubbly.

Serve warm with vanilla ice cream.

What kind of nuts??

You can use walnuts or pecans. Some might prefer pecans, but I'm kindof allergic to them, so I used walnuts.
