I have been on the hunt for a soft peanut butter cookie for a few years now. Our neighbor made these for us and it was just what I was looking for. Yum!
1 cup butter, soft
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
1 cup peanut butter
3 cup flour (2 for richer cookies)
2 tsp baking soda
½ tsp salt
Combine flour, baking soda and salt in a medium bowl. Cream butter and sugars. Add eggs, vanilla and peanut butter. Mix well. Add flour and mix until just incorporated. Roll into walnut sized balls and place on un-greased baking sheet. Press with the tines of a fork to decorate the tops of the cookies. Bake at 350* for 8-10 minutes.
