1 c. diced onion
2-3 chicken breasts, cooked and shredded or cubed (or 1 can shredded chicken, undrained)
1 8oz. can diced green chilies, undrained
2 cans great northern beans (or white beans)
1 8oz. shoepeg corn, undrained (or any corn)
3 T. lime juice
1 tsp. lemon pepper
1 tsp. chili powder
1 tsp. ground cumin
In a large pot, brown chicken breasts, then add enough water to cover chicken. Add seasonings to flavor chicken broth. Bring to boil then simmer for 45 min. Remove chicken and shred. (Skip this part if using canned chicken)
Sauté onion and garlic in oil. Add drained, rinsed beans, corn, green chilies, chicken, lime juice, lemon pepper, cumin and chicken stock (approx. 2 cans broth) and bring to a boil. (Add more broth for desired consistency.) Serves 8-10
Optional: serve with grated cheese, salsa, green onion, sour cream , tortilla strips, and fresh lime wedges.
